How long can I leave chicken salad out of the fridge?
I went to a potluck and left the chicken salad out of the fridge for about 6 hours. I made it with chicken, mayo, sour cream, mixed veggy's, and Salt & Pepper.
Is it still safe to eat or should I toss it?
Toss it! Both the chicken and mayo can grow bacteria very fast if kept in temperatures above 40 F or below 140 F. My rule of thumb is 2 hours (or 1 hour if it's hot and we're outside) out of the fridge (or oven.) Don't take the chance and get sick.
